Ingredients

  • 1/2 cup butter
  • 1 cup + 2 tablespoons flour
  • 1 (10 oz.) package frozen chopped spinach
  • 1 cup grated cheddar cheese
  • 1 cup grated Swiss cheese
  • 3 eggs
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 10 slices crisp bacon
  • 8 oz. fresh mushrooms sliced
  • 1 bunch green onions

Instructions

  1. Combine butter, cream cheese, and 1 cup of flour with a pastry blender until crumbly.
  2. Press into a pie plate to form a crust. Refrigerate.
  3. Preheat oven to 350°F.
  4. Cook spinach until tender. Drain and blot on paper towels to remove all excess water.
  5. In a large bowl, combine spinach and 2 tablespoons of flour.
  6. Add remaining ingredients and mix well.
  7. Pour mixture into the chilled crust and bake for 1 hour or until set.
