Ingredients

  • 1 1/2 cups self rising cornmeal
  • 2 eggs beaten
  • 2/3 cup oil
  • 3/4 cup buttermilk
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 small onion chopped
  • 1 can cream style corn
  • 1 cup sharp cheese grated
  • 1 bell pepper chopped

Instructions

  1. Preheat the oven to 400°F.
  2. Mix all ingredients except the cheese until well combined.
  3. Pour half of the mixture into a greased heavy skillet at least 2 inches deep.
  4. Spread the grated cheese evenly over the mixture.
  5. Pour the remaining mixture on top of the cheese.
  6. Bake for 45 minutes or until golden brown.
