Ingredients

  • 1 cup buttermilk
  • 1/2 cup sour cream
  • 1 egg
  • 1 cup cheddar cheese
  • 1 teaspoon soda
  • 1 small onion
  • 1 cup cream-style corn
  • 1 cup corn muffin meal
  • 1/4 cup ground cracklin
  • 2 tablespoons margarine
  • 1 cup milk
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a No. 6 skillet or similar baking dish.
  2. In a mixing bowl, combine buttermilk, sour cream, egg, and milk; stir well.
  3. Add cornmeal, cream-style corn, chopped onion, grated cheddar cheese, soda, ground cracklin, margarine, and salt to the mixture.
  4. Mix all ingredients thoroughly until well combined.
  5. Pour the batter into the prepared greased pan.
  6. Bake in the preheated oven for about 30 minutes or until the top is golden brown.
  7. Remove from the oven, let cool slightly, then serve warm.
