Ingredients

  • 1 cup shredded medium Cheddar cheese
  • 1 medium bell pepper, chopped
  • 2 eggs, slightly beaten
  • 1/2 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons melted butter or margarine
  • 1 teaspoon salt
  • 1 (17 oz.) can whole kernel corn, drained
  • 2 oz. jar pimento, drained and chopped

Instructions

  1. Combine all ingredients and mix well.
  2. Pour the mixture into a greased 1 1/2-quart casserole dish.
  3. Bake at 350°F (175°C) for 45 to 50 minutes until set and golden.
