Ingredients

  • 1 1/2 cup flour
  • 2 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 slightly beaten eggs
  • 1/3 cup milk
  • 1 (12 oz.) can whole kernel corn, drained
  • 1 (8 1/2 oz.) can cream-style corn
  • 2/3 cup crisp fried crumbled bacon
  • Oil (for frying)

Instructions

  1. Sift flour, baking powder, salt, and pepper together.
  2. Combine eggs, milk, drained whole kernel corn, and crumbled bacon; add to the flour mixture and mix only until well moistened.
  3. Heat oil 1 1/2 inches deep in a skillet to 365°F.
  4. Drop batter by scant teaspoonfuls into hot oil.
  5. Fry until golden, turning once.
  6. Drain on paper towels and serve warm.
