Ingredients

  • 1/2 c. flour
  • 1/2 tsp. soda
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 2 Tbsp. sugar
  • 1 1/4 c. cornmeal
  • 1 egg, beaten
  • 1 1/4 c. buttermilk
  • 1/4 c. oil

Instructions

  1. Combine all dry ingredients.
  2. Combine buttermilk, egg, and oil.
  3. Add wet ingredients to dry ingredients; stir quickly.
  4. Fill greased muffin pans 2/3 full.
  5. Bake at 425° for 12 to 15 minutes.
