Ingredients

  • 1 green pepper
  • 1 Tbsp. melted butter
  • 1/2 lb. American cheese
  • 1 can whole kernel corn
  • 1/2 tsp. salt
  • 2 eggs
  • 2/3 c. canned tomatoes

Instructions

  1. Cut the green pepper into small pieces.
  2. Cook and stir the green pepper in melted butter for 5 minutes.
  3. Add the American cheese, cut into small bits, and stir constantly until melted.
  4. Add the can of corn and salt, and stir until blended.
  5. In a separate bowl, beat the eggs and mix with canned tomatoes.
  6. Add the egg and tomato mixture to the hot cheese and corn mixture, stirring until hot.
  7. Serve immediately.
