Ingredients

  • 2 eggs
  • 1 (17 oz.) can creamed corn
  • 1/4 cup vegetable oil
  • 2 cups Cheddar cheese
  • 1 cup self-rising cornmeal
  • 1 cup milk
  • 1 pound ground beef
  • 1 large onion
  • 2 to 4 jalapeno peppers

Instructions

  1. Combine eggs, cornmeal, creamed corn, milk, and vegetable oil in a bowl; set aside.
  2. Cook ground beef until browned; drain well and set aside.
  3. Pour half of the cornmeal mixture into a greased 1 1/2-inch cast-iron skillet.
  4. Spread the cooked beef evenly over the batter.
  5. Top with shredded Cheddar cheese, chopped onion, and chopped jalapenos or bell peppers.
  6. Pour the remaining batter over the toppings.
  7. Bake at 350°F (175°C) for 40 to 45 minutes until golden and cooked through.
