Ingredients

  • 3 oz. lime jello
  • 2 cups hot water
  • pinch of salt
  • 1 can crumbled corned beef
  • 1/2 cup fine diced cucumber
  • 1/4 cup fine diced green pepper
  • 2 Tbsp. diced onions
  • 1/2 cup diced celery
  • 2 hard-boiled eggs
  • 1 cup mayonnaise

Instructions

  1. Dissolve lime jello in hot water.
  2. Add a pinch of salt and stir.
  3. Chill until the mixture begins to jell.
  4. Fold in crumbled corned beef, diced cucumber, green pepper, diced onions, diced celery, and chopped hard-boiled eggs.
  5. Fold in mayonnaise until well combined.
  6. Pour into a ring mold and refrigerate until firm.
