Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 beaten eggs
  • 1 cup mashed, ripe bananas
  • 1/3 cup cooking oil
  • 1/2 cup chopped walnuts
  • about 1 tablespoon additional cornmeal

Instructions

  1. Stir together 1 cup cornmeal, all-purpose flour, sugar, baking powder, and salt.
  2. Mix beaten eggs, mashed ripe bananas, and cooking oil.
  3. Add to dry ingredients; stir just enough to moisten.
  4. Fold in chopped walnuts.
  5. Pour batter into a greased loaf pan sprinkled with about 1 tablespoon additional cornmeal.
  6. Bake in a preheated oven at 350°F (175°C) for about 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before removing from the pan and slicing.
