Ingredients

  • 1 cup cornmeal
  • 1.5 cups bread crumbs
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon thyme
  • 1/4 teaspoon nutmeg
  • 4 chicken legs
  • 1 cup flour
  • 4 beaten eggs
  • salt and pepper

Instructions

  1. Preheat oil in a fryer to 350°F.
  2. Mix cornmeal, bread crumbs, celery seed, thyme, and nutmeg in a bowl; set aside.
  3. Place chicken legs in a large pan, cover with water, season, and bring to a boil.
  4. Skim water and cook the chicken, partially covered, for 20 to 22 minutes over low heat.
  5. Remove chicken from the pan and trim the skin away.
  6. Dredge the chicken with flour, then dip into beaten eggs, and coat with the cornmeal mixture.
  7. Deep fry the coated chicken for 6 to 7 minutes until golden and cooked through.
