Ingredients

  • 12 oz. can yellow corn, drained
  • 12 oz. can white corn, drained
  • 1/2 c. celery, finely chopped
  • 1/2 c. green pepper, finely chopped
  • 1/2 c. onion, finely chopped
  • 2 oz. jar pimento, well drained
  • 1/8 tsp. garlic powder
  • 12 packets sugar substitute
  • 1/2 c. white wine vinegar

Instructions

  1. Combine the yellow corn, white corn, chopped celery, green pepper, onion, and drained pimento in a 2-quart serving dish.
  2. In a saucepan, combine the white wine vinegar and garlic powder.
  3. Bring the mixture to a boil, then remove from heat and add the sugar substitute.
  4. Stir until well mixed.
  5. Pour the vinegar mixture over the vegetables and mix well.
  6. Chill the salad for several hours or overnight before serving.
