Coyote Caviar
Ingredients
- 1 can black beans, rinsed and drained
- 1 can chopped ripe olives, drained ⓘ
- 1 small onion, chopped ⓘ
- 14 oz. diced green chiles ⓘ
- 1 clove garlic, chopped ⓘ
- 4 Tbsp. cilantro, chopped ⓘ
- 2 Tbsp. vegetable oil ⓘ
- 1 green onion, sliced ⓘ
- 2 Tbsp. lime juice ⓘ
- 2 tsp. chili powder ⓘ
- 1/4 tsp. salt ⓘ
- 1/4 tsp. crushed red pepper ⓘ
- 1/4 tsp. cumin ⓘ
- 1 tsp. pepper ⓘ
- 1 pkg. cream cheese, softened ⓘ
- 2 hard-boiled eggs, peeled and chopped ⓘ
- salsa ⓘ
Instructions
- Mix all ingredients except cream cheese, eggs, green onions and salsa.
- Cover and refrigerate 2 hours.
- Spread cream cheese on round serving plate.
- Spoon bean mixture evenly over cream cheese. Arrange eggs on bean mixture around edges along with salsa. Sprinkle with green onions.
- Serve with tortilla chips.
- Serves 12.
