A savory crab quiche featuring flaky pie crust, Swiss cheese, and scallions, baked to perfection. Perfect for brunch, lunch, or a light dinner for seafood lovers.

Ingredients

  • 8 or 9-inch pie shell
  • 1/2 cup margarine
  • 2 eggs
  • 1/2 cup milk
  • 7 oz drained and flaked crab meat
  • 8 oz Swiss cheese diced
  • 1/2 cup scallions
  • bread crumbs
  • Parmesan cheese

Instructions

  1. Mix all ingredients except the bread crumbs and Parmesan cheese.
  2. Pat the bottom of the pie shell with small dabs of butter before adding the mixture.
  3. Pour the mixture into the unbaked pie shell.
  4. Sprinkle bread crumbs and Parmesan cheese on top.
  5. Bake at 350°F for 45 minutes until golden and set.
