Cranberry & Caramel Date Bars

Sweet and tart cranberry and caramel date bars combine oats, nuts, and a buttery crust for a delicious treat perfect for snacking or dessert gatherings.

Ingredients

  • 1 cup cranberries
  • 1/2 cup plus 2 tablespoons sugar
  • 2 1/3 cups flour
  • 2 cups oats
  • 1/2 cup light brown sugar
  • 1/2 teaspoon baking soda
  • 1 cup oleo (melted)
  • 1 1/2 cups chopped dates
  • 3/4 cup chopped nuts
  • 1 cup caramel ice cream topping

Instructions

  1. Heat oven to 350°F (175°C).
  2. In a bowl, combine cranberries and 2 tablespoons of sugar.
  3. In another bowl, mix 2 1/3 cups of flour, oats, remaining 1/2 cup of sugar, light brown sugar, and baking soda. Add melted oleo and mix well.
  4. Reserve 1 cup of the crumb mixture.
  5. Press the remaining crumb mixture firmly on the bottom of a 13 x 9 inch baking pan.
  6. Bake for 15 minutes.
  7. Sprinkle chopped dates, chopped nuts, and cranberry mixture over the crust.
  8. Mix caramel ice cream topping with the remaining 1/3 cup of flour and spoon over the fruit and nuts.
  9. Top with the reserved crumb mixture.
  10. Bake for an additional 20 minutes or until lightly brown.
  11. Cool before cutting into bars.
