Ingredients

  • 3/4 cup water
  • 1/2 cup oat bran
  • 1/2 cup low-fat milk
  • 1/3 cup canola oil
  • 2 large egg whites
  • 1/3 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped Blue Ribbon Mission or Calimyrna figs

Instructions

  1. Preheat oven to 400°F and adjust oven rack to above oven center.
  2. In a small saucepan, heat water to a rolling boil.
  3. Stir in oat bran and remove from heat.
  4. Continue stirring until smooth and free of lumps, then set aside to cool for 5 minutes.
  5. Stir milk and oil into the oat mixture.
  6. Beat egg whites with sugar until foamy.
  7. Stir the oat mixture into the egg white mixture.
  8. Combine flour with baking powder and salt.
  9. Stir the flour mixture into the wet ingredients along with chopped figs and cranberries.
  10. Spoon batter into 12 paper-lined muffin tins.
  11. Bake for 20 minutes or until lightly brown.
  12. Cool for 10 minutes before serving.
