Ingredients

  • 2 c. sifted flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 c. shortening
  • 3/4 c. orange juice
  • 1 Tbsp. grated orange rind
  • 1 egg
  • 1 c. raw cranberries, coarsely chopped
  • 1/2 c. chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease two 9 x 5 x 3-inch loaf pans and set aside.
  3. Sift together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  4. Cut in shortening until the mixture resembles coarse cornmeal.
  5. Combine orange juice, grated orange rind, and beaten egg in a separate bowl.
  6. Pour the liquid mixture into the dry ingredients all at once.
  7. Mix slightly, then carefully fold in the chopped cranberries and chopped nuts.
  8. Spoon the batter into the prepared loaf pans.
  9. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted in the center comes out clean.
