Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 2/3 cup milk
  • 2/3 cup sugar
  • 1 tablespoon grated orange rind
  • 1/3 cup orange juice
  • 1/4 cup oil
  • 1 1/2 cups Post Oat Flakes
  • 1 cup chopped cranberries
  • 1/2 cup chopped nuts

Instructions

  1. Mix the flour, baking powder, and salt together in a bowl.
  2. In a separate bowl, beat eggs, milk, sugar, grated orange rind, orange juice, and oil until well combined.
  3. Add the wet ingredients to the dry ingredients and stir just enough to moisten the flour.
  4. Stir in the cereal, chopped cranberries, and chopped nuts until evenly distributed.
  5. Pour the batter into a well-greased 9 x 5-inch loaf pan.
  6. Bake at 350°F (175°C) for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the bread in the pan for 10 minutes.
  8. Remove from the pan and allow to cool completely on a wire rack.
