Ingredients

  • 1/2 cup fresh, dried or thawed frozen cranberries
  • 6 tablespoons granulated sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 2 tablespoons orange juice
  • 1 teaspoon vanilla
  • 1/2 teaspoon orange peel
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk eggs, orange juice, vanilla, and orange peel.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fold in the cranberries and chopped pecans.
  7. Turn the dough onto a floured surface and knead gently a few times.
  8. Pat the dough into a 1-inch thick circle and cut into wedges.
  9. Place the wedges on a baking sheet lined with parchment paper.
  10. Bake for 20 to 25 minutes or until golden brown.
  11. Allow to cool slightly before serving.
