Cranberry-Orange Upside-Down Cake

- Preheat oven to 350°F (175°C).
- Cover the bottom of a 13 x 9 x 2-inch baking pan with melted butter; sprinkle evenly with brown sugar.
- Arrange orange slices in rows on top of the sugar layer.
- Sprinkle cranberries over the orange slices and set aside.
- In a mixing bowl, cream shortening and sugar together until fluffy.
- Beat in eggs until smooth.
- In a separate bowl, sift together flour, baking powder, baking soda, and salt.
- Alternately add dry ingredients and milk (or orange juice) to the creamed mixture, beating until smooth after each addition.
- Stir in grated orange peel into the batter.
- Pour the batter over the cranberry-orange mixture in the pan.
- Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Immediately turn the cake out onto a platter or tray.
- Garnish with whipped cream or ice cream before serving.
