Ingredients

  • 2 Tbsp. melted butter
  • 1 cup brown sugar
  • 2 oranges peeled and sliced into cartwheels
  • 2 cups raw cranberries
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups sifted flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 2 tsp. grated orange peel

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cover the bottom of a 13 x 9 x 2-inch baking pan with melted butter; sprinkle evenly with brown sugar.
  3. Arrange orange slices in rows on top of the sugar layer.
  4. Sprinkle cranberries over the orange slices and set aside.
  5. In a mixing bowl, cream shortening and sugar together until fluffy.
  6. Beat in eggs until smooth.
  7. In a separate bowl, sift together flour, baking powder, baking soda, and salt.
  8. Alternately add dry ingredients and milk (or orange juice) to the creamed mixture, beating until smooth after each addition.
  9. Stir in grated orange peel into the batter.
  10. Pour the batter over the cranberry-orange mixture in the pan.
  11. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  12. Immediately turn the cake out onto a platter or tray.
  13. Garnish with whipped cream or ice cream before serving.
