Ingredients

  • 1 1/2 cups flour
  • 2/3 cup sugar
  • 1 teaspoon baking powder
  • 2/3 teaspoon salt
  • 1/3 teaspoon baking soda
  • 2/3 cup orange juice
  • 3 tablespoons melted margarine
  • 3 tablespoons water
  • 1 well-beaten egg
  • 1 cup chopped cranberries
  • 2/3 cup coarsely ground pecans
  • 2 teaspoons grated orange rind

Instructions

  1. Sift together flour, sugar, baking powder, salt, and baking soda.
  2. Make a well in the center of the dry ingredients.
  3. In a separate bowl, combine orange juice, melted margarine, water, and well-beaten egg.
  4. Pour the wet ingredients into the well and stir just until moistened.
  5. Fold in chopped cranberries, coarsely ground pecans, and grated orange rind.
