Cranberry Surprise Loaf

- Preheat oven to 350°F (175°C). Grease and flour the bottom only of a 9 x 5 inch loaf pan.
- In a small bowl, beat the cream cheese until light and fluffy. Add 1 beaten egg and blend well. Set aside.
- In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
- Stir in apple juice, melted margarine or butter, and the remaining beaten egg.
- Fold in the chopped cranberries.
- Spoon half of the batter into the prepared loaf pan.
- Evenly spoon the cream cheese mixture over the batter.
- Top with the remaining batter.
- Bake at 350°F (175°C) for 65 to 75 minutes, or until the top springs back when lightly touched.
- Cool for 15 minutes, then remove from the pan and cool on a wire rack.
