Ingredients

  • 6 oz. cream cheese
  • 1 egg
  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 c. apple juice
  • 1/4 c. melted margarine or butter
  • 1 beaten egg
  • 1 1/2 c. fresh cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour the bottom only of a 9 x 5 inch loaf pan.
  2. In a small bowl, beat the cream cheese until light and fluffy. Add 1 beaten egg and blend well. Set aside.
  3. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  4. Stir in apple juice, melted margarine or butter, and the remaining beaten egg.
  5. Fold in the chopped cranberries.
  6. Spoon half of the batter into the prepared loaf pan.
  7. Evenly spoon the cream cheese mixture over the batter.
  8. Top with the remaining batter.
  9. Bake at 350°F (175°C) for 65 to 75 minutes, or until the top springs back when lightly touched.
  10. Cool for 15 minutes, then remove from the pan and cool on a wire rack.
