Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup firmly packed brown sugar
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups flour
  • 1/2 cup sour cream
  • 1/2 cup jellied cranberry sauce
  • 1/2 cup chopped walnuts

Instructions

  1. Line 24 muffin cups with paper liners.
  2. In a medium bowl, combine the butter and brown sugar; mix well.
  3. Beat in the eggs, cinnamon, and nutmeg.
  4. Blend in thoroughly.
  5. Stir in the salt, baking soda, and flour alternately with sour cream and cranberry sauce.
  6. Do not overmix.
  7. Fold in the chopped walnuts.
  8. Fill muffin cups 1/2 to 2/3 full.
  9. Bake in a preheated oven at 350°F (175°C) for 20 to 25 minutes.
  10. Cool completely.
  11. Frost with Buttermilk Icing.
