Ingredients

  • 1 lb. crawfish tails
  • 1 can cream of mushroom soup
  • 1/4 cup onions, chopped
  • 1/2 cup sweet peppers, chopped
  • 1/2 cup scallions, chopped
  • 1/4 cup parsley, chopped
  • salt
  • cayenne pepper
  • 1 teaspoon paprika

Instructions

  1. Saute onions and sweet peppers in butter or margarine for 5 minutes.
  2. Add cream of mushroom soup to the sautéed vegetables.
  3. Add a few tablespoons of water if necessary to thin the mixture.
  4. Add scallions, parsley, salt, cayenne pepper, and paprika to taste.
  5. Add crawfish tails and cook for 5 minutes or until done.
  6. Serve over white rice.
