  2. Add crawfish fat and season highly. Cook uncovered for 40 minutes over a low fire.
  3. Add the peeled crawfish tails and cook for another 10 minutes.
  4. Add green onion and cooked rice.
  5. Mix well and steam for 5 minutes before serving.
  6. If it seems too dry, add more margarine.
