Creamed Fish combines tender halibut with a rich, creamy sauce infused with herbs and nutmeg, topped with Parmesan cheese and bread crumbs—perfect for a comforting meal.

Instructions
- Scald the milk.
- Put onion, parsley, and thyme in a cheesecloth and cook slowly in the milk for one hour or more.
- Remove the seasoning from the milk.
- Melt the butter in a saucepan.
- Add the flour and cook for a few minutes until browned.
- Gradually add the warm milk to the butter and flour mixture, stirring constantly, with a pinch of salt, nutmeg, and the egg yolk.
- Cook the halibut with salt and lemon juice until done.
- Flake the cooked halibut.
- Layer some sauce in the bottom of a baking dish, then add a layer of flaked fish.
- Season lightly with salt and pepper, then add more sauce and fish, repeating layers as desired.
- Sprinkle the top with buttered bread crumbs and cover with grated Parmesan cheese.
- Bake until golden and bubbly.
