Creamed Fish combines tender halibut with a rich, creamy sauce infused with herbs and nutmeg, topped with Parmesan cheese and bread crumbs—perfect for a comforting meal.

Ingredients

  • 1/3 cup butter
  • 1/3 cup flour
  • 1 pint milk
  • 1 onion
  • sprig of parsley
  • 1/2 teaspoon thyme
  • 1/8 to 1/4 teaspoon grated nutmeg
  • 1 egg yolk
  • 1 pound halibut
  • salt
  • lemon juice
  • buttered bread crumbs
  • grated Parmesan cheese

Instructions

  1. Scald the milk.
  2. Put onion, parsley, and thyme in a cheesecloth and cook slowly in the milk for one hour or more.
  3. Remove the seasoning from the milk.
  4. Melt the butter in a saucepan.
  5. Add the flour and cook for a few minutes until browned.
  6. Gradually add the warm milk to the butter and flour mixture, stirring constantly, with a pinch of salt, nutmeg, and the egg yolk.
  7. Cook the halibut with salt and lemon juice until done.
  8. Flake the cooked halibut.
  9. Layer some sauce in the bottom of a baking dish, then add a layer of flaked fish.
  10. Season lightly with salt and pepper, then add more sauce and fish, repeating layers as desired.
  11. Sprinkle the top with buttered bread crumbs and cover with grated Parmesan cheese.
  12. Bake until golden and bubbly.
