Ingredients

  • 6 to 8 oz. Alaskan King crab meat
  • 1 small zucchini
  • 3/4 cup sliced mushrooms
  • 1/4 cup finely chopped onions
  • 1 1/2 Tbsp. olive oil
  • 4 eggs
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. basil
  • pinch of oregano
  • 1 Tbsp. chopped parsley
  • grated Parmesan cheese

Instructions

  1. Thaw, drain, and slice the king crab meat.
  2. Slice the zucchini and cut into halves.
  3. Sauté zucchini, mushrooms, and onions in olive oil in a 9-inch skillet.
  4. Add the crab meat and heat through.
  5. Beat the eggs and blend in salt, pepper, basil, and oregano.
  6. Pour the eggs over the crab and vegetable mixture.
  7. Sprinkle with chopped parsley.
  8. Cook over low heat, lifting the edges to allow uncooked eggs to run underneath, until set.
  9. Sprinkle with grated Parmesan cheese and place under a hot broiler until the top is delicately browned.
  10. Cut into wedges and serve immediately.
