Instructions

  3. In bacon fat, cook celery and onion until clear.
  4. Add peas, water, potatoes, salt, pepper, bouillon cubes, bay leaf, and cooked bacon to the Dutch oven.
  5. Bring to a boil; reduce heat to low.
  6. Cover and simmer for 1 to 1 1/2 hours, until peas are tender.
  7. Stir the soup.
  8. Remove and discard the bay leaf.
  9. Fill a blender three-quarters full; blend until pureed.
  10. Pour the pureed mixture into a large bowl; repeat until all is blended.
  11. Return the blended soup to the Dutch oven.
  12. Add cream; cook until hot, about 10 to 15 minutes.
  13. Stir well.
  14. Serve with crumbled bacon and parsley on top.
