Creamy potato chowder combines tender potatoes, sweet corn, diced ham, and aromatic herbs in a comforting, hearty soup perfect for chilly days and family meals.

Ingredients

  • 5 medium potatoes, peeled and diced
  • 1 cup frozen whole kernel corn
  • 3 bay leaves
  • 1/2 teaspoon pepper
  • 1 teaspoon dried parsley flakes
  • 1 large onion, diced
  • 2 carrots, diced
  • 1 1/2 cups diced cooked ham
  • 1 teaspoon garlic salt
  • milk
  • 1 tablespoon butter or margarine

Instructions

  1. Place potatoes, onion, and carrots in a large kettle or saucepan.
  2. Add enough water to cover the vegetables.
  3. Bring to a boil and cook until vegetables are tender, about 30 minutes.
  4. Add corn, ham, bay leaves, garlic salt, pepper, parsley flakes, butter, and enough milk to reach desired soup consistency.
  5. Simmer uncovered over medium to low heat for 20 minutes or until heated through.
  6. Remove bay leaves before serving.
