Creole Corn Bread is a cheesy, spicy, and hearty dish combining rice, corn, cheese, and jalapenos, perfect for a flavorful side or comfort meal with a Creole twist.

Ingredients

  • 2 cups cooked rice
  • 1/2 teaspoon baking soda
  • 1 cup milk
  • 1 (16 1/2 oz) can cream-style corn
  • 3 cups shredded Cheddar cheese
  • 1 cup yellow cornmeal
  • 1 to 2 tablespoons jalapeno pepper
  • 2 eggs
  • 1/4 cup vegetable oil
  • additional cornmeal

Instructions

  1. In a large bowl, combine cooked rice, cornmeal, chopped onion, seeded and chopped jalapeno peppers, salt, and baking soda.
  2. In a separate bowl, beat eggs, milk, and vegetable oil until well blended.
  3. Add the cream-style corn to the egg mixture and mix well.
  4. Pour the corn mixture into the rice mixture and stir until blended.
  5. Fold in the shredded Cheddar cheese.
  6. Spray a well-greased 10-inch ovenproof skillet with additional cornmeal.
  7. Pour the batter into the prepared skillet.
  8. Bake at 350°F (175°C) for 45 to 50 minutes or until the bread tests done.
  9. Cut into wedges while warm and serve.
