Ingredients

  • 1/4 cup Promise margarine
  • 1 large onion, chopped
  • 1/2 cup sliced celery
  • 1 teaspoon minced garlic
  • 1 (16 oz) can 50% less salt tomatoes, undrained and cut into pieces
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon hot pepper sauce
  • 1 cup sliced fresh mushrooms
  • 1 1/2 pounds fish fillets (sole, flounder or turbot)

Instructions

  1. In a large skillet, melt the margarine and sauté the chopped onion, sliced celery, and minced garlic for 3 minutes.
  2. Stir in the undrained chopped tomatoes, bay leaf, Worcestershire sauce, salt, and hot pepper sauce.
  3. Simmer the mixture for 15 minutes or until it thickens.
  4. Add the sliced mushrooms to the sauce.
  5. Roll the fish fillets and arrange them in the sauce.
  6. Cover the skillet and cook for 10 minutes longer or until the fish is done.
  7. Remove the fish to a serving platter.
  8. Remove and discard the bay leaf from the sauce.
  9. Spoon the sauce around the fish and sprinkle with parsley if desired.
