Ingredients

  • 4 large potatoes, peeled and sliced
  • 2 large onions, sliced
  • 2 cups sliced celery
  • flour
  • 1 cup beer
  • 1 cup chicken stock
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup oleo
  • 1/2 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder

Instructions

  1. Place layers of peeled and sliced potatoes, sliced onions, and sliced celery into a 2-quart casserole dish.
  2. Sprinkle a small amount of flour between the potato layers.
  3. Mix the beer with chicken stock, then pour over the layered vegetables along with salt and black pepper.
  4. Cover the casserole and bake in a 350°F (175°C) oven for 45 minutes to 1 hour, or until the potatoes are almost tender.
  5. Meanwhile, melt oleo (butter or margarine) and stir in bread crumbs, grated Parmesan cheese, and garlic powder.
  6. Uncover the casserole and sprinkle the crumb mixture over the top.
  7. Continue baking uncovered for an additional 10 minutes, or until the top is golden brown and the potatoes are tender.
