Ingredients

  • 1 medium cabbage, shredded
  • 1 small onion, minced
  • 1/2 cup sweet pickle cubes
  • 1 cup mayonnaise
  • 1/4 cup sugar
  • 1/4 white vinegar
  • 1 Tbsp salt
  • 1 tsp celery seed or celery salt
  • 1/4 tsp pepper
  • leaf lettuce

Instructions

  1. Combine shredded cabbage, minced onion, and sweet pickle cubes in a large bowl.
  2. Set the cabbage mixture aside.
  3. In a separate bowl, combine mayonnaise, sugar, vinegar, salt, celery seed or celery salt, and pepper. Stir well.
  4. Pour the dressing over the cabbage mixture and toss well.
  5. Cover and refrigerate the coleslaw for several hours to allow flavors to meld.
  6. Serve the coleslaw in a lettuce-lined bowl, garnished with pepper rings and pimento if desired.
