Ingredients

  • 1/3 cup yellow cornmeal
  • 2 cups flour
  • 2 teaspoons olive oil
  • 1 large onion, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 3 medium tomatoes
  • 8 oz mozzarella
  • 3.5 oz pitted ripe olives
  • 3.5 oz sliced pepperoni
  • 2 oz anchovy fillets (optional)
  • 1/4 cup packed thinly sliced basil

Instructions

  1. In a medium bowl, combine the cornmeal and approximately 2 cups of flour.
  2. Gradually stir in 3/4 cup cold water with a fork until the mixture becomes stiff and leaves the sides of the bowl.
  3. Knead the dough for 2 minutes or until smooth.
  4. Cover the bowl with plastic wrap and let it rise for 15 minutes.
