Ingredients

  • 1/3 cup all-purpose flour
  • 1/4 cup beer
  • 1 large egg white
  • 1/2 teaspoon salt
  • 3/4 cup fine, dry, unseasoned breadcrumbs
  • 1/4 cup finely chopped pecans
  • 1/4 teaspoon ground black pepper
  • 1 pound medium shrimp, peeled and deveined
  • 4 lemon wedges

Instructions

  1. Preheat oven to 450°F.
  2. Lightly oil a rack large enough to hold the shrimp in a single layer.
  3. Set the rack on a baking sheet.
  4. In a medium bowl, whisk together the flour, beer, egg white, and 1/4 teaspoon salt until creamy and smooth.
  5. Dip the shrimp into the batter, then coat with the breadcrumb and pecan mixture.
  6. Arrange the coated shrimp on the prepared rack.
  7. Bake in the preheated oven for about 10 minutes or until golden and crispy.
  8. Serve with lemon wedges.
