Ingredients

  • 2 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 1 cup light brown sugar
  • 2 eggs
  • 1 cup white sugar
  • 1 teaspoon vanilla
  • 1 cup oatmeal
  • 2 cups Rice Krispies
  • 1 cup coconut

Instructions

  1. Mix together brown sugar, white sugar, and oil until well combined.
  2. Add eggs and vanilla to the sugar mixture and blend thoroughly.
  3. Sift together flour, soda, and salt.
  4. Gradually add the dry ingredients to the sugar mixture and mix until fully combined.
  5. Fold in oatmeal, Rice Krispies, and coconut until evenly distributed.
  6. Drop spoonfuls of the mixture onto a baking sheet and bake in a preheated oven at 350°F (175°C) for about 10 minutes or until golden brown.
