Ingredients

  • 1 lb. fresh carrots
  • 1 tsp. salt
  • 2 c. grated Swiss or Jack cheese
  • 1/4 c. grated Parmesan cheese
  • 4 eggs
  • 1 tsp. dried oregano

Instructions

  1. Steam the cut-up carrots until tender but not mushy.
  2. Mash the carrots coarsely.
  3. Drain off any excess liquid.
  4. Lightly sprinkle the carrots with salt.
  5. In a large mixing bowl, combine the carrots, beaten eggs, grated cheese, and dried oregano.
  6. Pour the mixture into a pie pan or an 8-inch square pan.
  7. Sprinkle the Parmesan cheese on top.
  8. Bake at 350°F (175°C) for 30 to 40 minutes, or until a knife inserted in the center comes out clean and edges are slightly golden.
  9. Cut into wedges or squares.
  10. Serve the quiche warm or cold, preferably with bread sticks and tossed greens.
