- Steam the cut-up carrots until tender but not mushy.
- Mash the carrots coarsely.
- Drain off any excess liquid.
- Lightly sprinkle the carrots with salt.
- In a large mixing bowl, combine the carrots, beaten eggs, grated cheese, and dried oregano.
- Pour the mixture into a pie pan or an 8-inch square pan.
- Sprinkle the Parmesan cheese on top.
- Bake at 350°F (175°C) for 30 to 40 minutes, or until a knife inserted in the center comes out clean and edges are slightly golden.
- Cut into wedges or squares.
- Serve the quiche warm or cold, preferably with bread sticks and tossed greens.
