Ingredients

  • 5 eggs, beaten
  • 1 (12 oz.) pkg. frozen hash browns, thawed
  • 1 cup (4 oz.) shredded Swiss or Monterey Jack cheese
  • 1 large green onion, chopped
  • 1/2 cup cream-style cottage cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • dash hot sauce
  • paprika
  • 6 slices bacon, cooked and crumbled

Instructions

  1. Combine eggs, hash browns, cheese, onion, cottage cheese, salt, pepper, and dash of hot sauce; stir well.
  2. Pour mixture into a lightly greased 9-inch pie plate.
  3. Sprinkle with paprika.
  4. Bake at 350°F for 25 minutes or until set.
  5. Sprinkle bacon evenly on top.
  6. Bake an additional 5 minutes.
  7. Let stand 5 minutes before serving.
