- Scrub potatoes and quarter them.
- Place in a saucepan with 1/2 inch boiling, salted water.
- Cover and bring to a boil; reduce heat and simmer, covered, about 20 minutes or until tender.
- Peel potatoes and mash with milk, butter, salt, and pepper.
- Stir in grated Parmesan cheese and minced green onion; mix well.
- Shape the mixture into balls about 1-inch in diameter.
- Dip potato balls into beaten eggs, then roll in coarsely crushed cornflakes.
- Place on a greased baking sheet and bake at 400°F for 10 minutes or until balls are hot and crusty.
