Ingredients

  • 1 c. sugar
  • 1 c. dark molasses
  • 1 c. shortening
  • 1 c. raisins
  • 1 c. chopped nuts
  • 2 eggs
  • 2 tsp. cinnamon
  • 2 tsp. ginger
  • 1 tsp. salt
  • 2 tsp. soda
  • 1 c. coffee

Instructions

  1. Combine sugar, dark molasses, and shortening in a mixing bowl.
  2. Add raisins and chopped nuts; mix well.
  3. Beat in eggs one at a time.
  4. Stir in cinnamon, ginger, and salt.
  5. Dissolve soda in coffee and add to the mixture.
  6. Gradually add flour, mixing thoroughly after each addition.
  7. Drop spoonfuls of dough onto greased cookie sheets.
  8. Bake at 350°F (175°C) for 10 minutes or until golden brown.
