Ingredients

  • 2 medium cucumbers
  • 1/4 cup buttermilk
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp finely minced onion

Instructions

  1. Pare 1 cucumber.
  2. Cut both cucumbers into slices, reserving 6 slices for garnish and refrigerating them wrapped.
  3. Pour 1/4 cup buttermilk and 1/2 of the cucumber slices into a blender and blend until smooth.
  4. Add the remaining cucumber slices, salt, pepper, and onion, then blend until smooth.
  5. Stir in the remaining buttermilk.
  6. Cover and refrigerate for at least 2 hours until very cold.
  7. Add garnishes before serving, such as the reserved cucumber slices or chopped chives.
