- Place frozen chopped spinach in a strainer and rinse with hot water.
- Press out excess water from the spinach.
- Saute ground beef in a skillet, add salt, sliced mushrooms, and chopped onion.
- Remove from heat.
- Add drained spinach, sour cream, and seasonings (oregano, basil, thyme, nutmeg).
- Stir in 1/2 cup shredded cheddar cheese and 1/2 cup grated parmesan cheese.
- Transfer the mixture to a 2-quart casserole dish.
- Top with the remaining cheese.
- Bake at 350°F for 20-25 minutes until bubbly and golden on top.
