Ingredients

  • 2 packages frozen chopped spinach (10-12 oz each)
  • 1 teaspoon salt
  • 1 pound lean ground beef
  • 1 chopped onion
  • 1/2 pound fresh mushrooms, sliced
  • 1 cup sour cream
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon thyme
  • 1/8 teaspoon nutmeg

Instructions

  1. Place frozen chopped spinach in a strainer and rinse with hot water.
  2. Press out excess water from the spinach.
  3. Saute ground beef in a skillet, add salt, sliced mushrooms, and chopped onion.
  4. Remove from heat.
  5. Add drained spinach, sour cream, and seasonings (oregano, basil, thyme, nutmeg).
  6. Stir in 1/2 cup shredded cheddar cheese and 1/2 cup grated parmesan cheese.
  7. Transfer the mixture to a 2-quart casserole dish.
  8. Top with the remaining cheese.
  9. Bake at 350°F for 20-25 minutes until bubbly and golden on top.
