Ingredients

  • 1/4 cup margarine
  • 1 medium onion
  • 1 cup uncooked rice
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 cup orange juice
  • 2 teaspoons orange zest
  • 1/2 cup seedless raisins
  • 1 bay leaf

Instructions

  1. Melt butter in a heavy saucepan or flameproof casserole; sauté onion until soft and golden, but not brown.
  2. Stir in curry and rice; cook for 2 minutes longer, stirring constantly.
  3. Add chicken broth, orange juice, orange zest (if using), salt, raisins, and bay leaf; stir with a fork.
  4. Bring to boiling; lower heat and cover.
  5. Simmer for 15 to 20 minutes or until rice is tender and liquid has been absorbed.
  6. Remove bay leaf before serving.
