Ingredients

  • 1 lb. canned salmon, drained and flaked
  • 1 (2 oz.) jar pimientos, chopped
  • 1/2 cup plain yogurt
  • 1/2 cup celery, chopped
  • 2 eggs
  • 1/2 cup pickle relish
  • 1 cup bread crumbs or cooked rice
  • 1 cup carrots, blender chopped
  • 1 cup sharp Cheddar cheese, grated
  • 1 clove garlic, minced
  • 1 cup hot curried white sauce

Instructions

  1. Mix the canned salmon, pimientos, yogurt, celery, eggs, pickle relish, bread crumbs or cooked rice, carrots, cheddar cheese, minced garlic, and hot curried white sauce in a large bowl.
  2. Press the mixture into a greased loaf pan.
  3. Sprinkle the top with bread crumbs sautéed in butter with a touch of thyme or rosemary.
  4. Bake at 375°F for 1 hour, or until the loaf is firm and the top is golden.
  5. Serve warm with extra curry sauce on the side.
