Ingredients

  • 4 whole chicken breasts, cooked and deboned
  • 2 packages chopped broccoli, cooked and drained
  • 1 can cream of chicken soup
  • 2/3 cup mayonnaise
  • 1/3 cup evaporated milk
  • 1/2 cup shredded Cheddar cheese
  • 1 teaspoon lemon juice
  • 1/2 teaspoon curry powder
  • 1 stick butter
  • 1 cup bread crumbs

Instructions

  1. Press cooked broccoli firmly into the bottom of a baking dish.
  2. Top the broccoli with cooked and sliced chicken breasts.
  3. In a large bowl, combine cream of chicken soup, mayonnaise, evaporated milk, shredded Cheddar cheese, lemon juice, curry powder, and melted butter.
  4. Pour the mixture evenly over the chicken slices.
  5. Mix bread crumbs with melted butter and sprinkle on top of the casserole.
  6. Bake at 350°F (175°C) for 25 to 30 minutes until golden and bubbly.
