Ingredients

  • 10 or 12 pieces chicken
  • 8 Tbsp. flour
  • 1 1/2 tsp. ground ginger
  • 3/4 stick butter
  • 1/2 cup chopped onion
  • 6 slices bacon
  • 2 Tbsp. flour
  • 1 Tbsp. curry powder
  • 2 tsp. sugar
  • 3 tsp. coconut
  • 3 tsp. applesauce
  • 3 tsp. ketchup
  • 2 tsp. lemon juice

Instructions

  1. Coat the chicken pieces with a mixture of flour and ground ginger.
  2. Place the coated chicken in a baking dish with melted butter and bake for 20 to 30 minutes or until browned.
  3. Meanwhile, mix the remaining ingredients (diced bacon, chopped onion, curry powder, sugar, coconut, applesauce, ketchup, lemon juice) and boil for 15 to 20 minutes to make the glaze.
  4. Pour the curry glaze over the baked chicken.
  5. Bake the chicken with the glaze in a 400°F oven for an additional 20 to 30 minutes until the chicken is fully cooked.
