Ingredients

  • 1/4 cup self-rising flour
  • 1/4 tsp. light salt
  • 3/4 cup milk
  • 3/4 cup cornmeal
  • 1/2 tsp. baking powder
  • 1 egg

Instructions

  1. Preheat an 8-inch iron skillet until hot.
  2. Sift all dry ingredients together: self-rising flour, light salt, baking powder, and cornmeal.
  3. Add egg and milk to the dry mixture.
  4. Mix well until batter is smooth.
  5. Pour the batter into the hot iron skillet.
  6. Bake at 425°F for about 20 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
