Ingredients

  • 1 cup oil
  • 3 eggs, beaten
  • 1 1/2 cups sugar
  • 2 1/2 cups flour
  • 1 cup buttermilk
  • 1 cup prunes
  • 1 cup chopped nuts
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon vanilla
  • 1 teaspoon salt

Instructions

  1. Cream together oil, beaten eggs, sugar, flour, and buttermilk until well blended.
  2. Add remaining ingredients: prunes, nuts, soda, baking powder, nutmeg, cinnamon, allspice, vanilla, and salt. Stir until combined.
  3. Pour batter into a greased Bundt pan.
  4. Bake at 350°F (175°C) for 30 minutes.
  5. Leave the cake in the pan and add your preferred topping before serving.
