Ingredients

  • 1 cup boiling water
  • 1 1/2 cups raisins
  • 2 teaspoons baking soda
  • 1 cup bran cereal
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1 egg
  • 1/4 cup oil

Instructions

  1. Pour boiling water over raisins and baking soda in a large bowl; let cool.
  2. Mix dry ingredients (flour, sugar, bran cereal) in a separate bowl.
  3. When cool, add beaten egg and oil to the raisins and water mixture.
  4. Add dry ingredients to the wet mixture and mix until just combined (do not overmix).
  5. Equally divide the batter into 3 greased 1-pound loaf pans.
  6. Bake at 350°F for 45 minutes.
  7. Cool for 20 minutes, then remove from pans onto a rack until completely cold.
  8. Wrap in foil and store in the refrigerator.
