Ingredients

  • 1/2 cup butter
  • 1 cup firmly packed brown sugar
  • 3 eggs
  • 3 tablespoons lemon juice
  • 2 cups grated carrots
  • 1 cup sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced dates
  • 1 teaspoon lemon rind

Instructions

  1. Cream butter and brown sugar together until smooth.
  2. Add eggs one at a time, beating well after each addition.
  3. Stir in lemon juice, lemon rind, and grated carrots; blend well.
  4. Sift all-purpose flour, baking powder, baking soda, and salt together.
  5. Gradually add dry ingredients to the carrot mixture and blend.
  6. Add diced dates and mix until dates are well coated with the batter.
  7. Generously grease an 8 x 4-inch loaf pan or three 5 x 3-inch loaf pans.
  8. Spoon the batter into the prepared pan or pans.
  9. Bake in a preheated oven at 350°F (175°C) for 30 to 40 minutes for small loaves or 45 to 50 minutes for large loaf, until a toothpick inserted in the center comes out clean.
