Date-Carrot Bread

- Cream butter and brown sugar together until smooth.
- Add eggs one at a time, beating well after each addition.
- Stir in lemon juice, lemon rind, and grated carrots; blend well.
- Sift all-purpose flour, baking powder, baking soda, and salt together.
- Gradually add dry ingredients to the carrot mixture and blend.
- Add diced dates and mix until dates are well coated with the batter.
- Generously grease an 8 x 4-inch loaf pan or three 5 x 3-inch loaf pans.
- Spoon the batter into the prepared pan or pans.
- Bake in a preheated oven at 350°F (175°C) for 30 to 40 minutes for small loaves or 45 to 50 minutes for large loaf, until a toothpick inserted in the center comes out clean.
